TARAMASALATA

Ingredients
Preferred measurement of units  

200g6½ oz red or blue cod smoked roe

1 clove garlic, crushed

2 Tbsp lemon juice

2 Tbsp olive oil

4 Tbsp cold water

1 cup fresh breadcrumbs

Method

Skin smoked roe.

Place smoked roe, crushed garlic, lemon juice, olive oil, water & breadcrumbs in a food processor or blender & mix until a thick smooth paste is formed.

Place in a small bowl, cover & chill.

Garnish with chopped parsley & lemon slices & serve with slices of thin toast or crusty bread.
